Nanna's 3 ingredient pineapple cake

ingredients

  • 2 cups self-raising flour, sifted

  • 1 cup caster sugar

  • 1 can (440g) crushed pineapple in syrup or juice, undrained (I choose to Goulbourn Circle pineapple crushed in juice)

method

  1. Preheat oven to 180°C. Line a loaf tin with baking paper and set aside.

  2. Mix all ingredients together until well combined.

  3. Pour into the loaf tin and bake for 55-60 minutes

As a small child with my twin and l remember the sweet smell of this cake coming out of the oven, at Nanny's. Nanna would alway say that we needed to wait for it to cool. l not sure who wanted this cake more us or Nanna, but we alway's seemed to eat this without it ever getting cooled in time for the buttercream and coconut icing to go on. Oh well just meant another treat to bake (lol)
