Carrot and Sultana Muffins

Gluten and lactose free, Carrot and Sultana Muffins

Today as l had one little one at home unwell and another l dropped at Kindy l had to do some coaxing so little misses deal breaker to stay was that l promised to bake her a cake so l got to thinking it as about as l set Master L up with the home schooling since he's off (no free ride here, when your sick, Laugh out Loud) and myself for some further study l decided something sweet but healthy so made these really yummy and healthy mini muffins.

There is enough to be frozen and put into kindy, school and daddy's lunch box for the remainder of the week. They’re perfect after school snacks for the little ones and a great treat for mum to enjoy with a midnight

cuppa.

P.S You can make them as regular sized muffins for older kids or adults, if you like and they freeze beautifully too.

This will make around 36 mini muffins or 12 regular sized muffins

Ingredients

1 1/2 cups gluten free rolled oats

1 cup gluten free self raising flour

1 cup firmly packed grated carrot cooked my and then mashed it

1/2 cup sultanas

2 eggs lightly beaten

2 teaspoons cinnamon

1 tablespoon honey

1/3 cup oil vegetable

1 cup lactose free milk

Method

1) Place rolled oats, sifted flour, sugar, carrot, , sultanas and cinnamon into a large bowl. Combine eggs, oil, milk and honey. Add liquid ingredients to dry ingredients and mix gently to just combine (over mixing will result in dry, tough muffins).

2) Spoon mixture either straight into lightly greased 3 x 12 hole mini muffin tins, or into mini muffin cases like I used. If you are making regular sized muffins, use 1 x 12 hole regular muffin tin.

3) Bake in a moderate oven, 190 degrees. 25 minutes for the mini muffins and 30 minutes for the regular sized muffins.

1peeled grated apple,

1 Cup Dairy - Lactose free milk, soy, dairy or almond milk,

1 cup firmly packed grated carrot cooked my and then mashed it

1 cup wholemeal self raising flour

1 1/2 cups rolled oats

1/3 cup oil coconut

1/2 cup sugar
